80 Virginia Bonded Wineries. To even the casual observer, the growth of the Virginia wine industry has appeared significant. In 1995 we had 53 wineries, today we have 80!

A pre-harvest workshop is scheduled for Monday, August 5, White Hall Vineyards, 10:00 am-4:30 pm. This program will be conducted by myself and a colleague, Lisa Van de Water, Director, The Wine Lab, Napa, CA and Pacific Rim Enology Services, Blenheim, New Zealand and Richard Cary, President of Vitis Research.

Pre-registration is required. The Workshop fee is $30 per person, which includes lunch, payable at the door. Send me an email message at bzoeckle@vt.edu with the word Pre-harvest in the subject line.

This practically-oriented, one-day program will include the following topics:

Scholarship Recipient. Emily Hodson, an MS candidate in the Enology-Grape Chemistry Group, Virginia Tech, has been awarded a scholarship by the American Society for Enology and Viticulture, Eastern Section. Emily's family owns one of Virginia's newest wineries, Veritas. Her research is on the application of aroma/flavor trapping. She will receive her award at the annual meeting of the Eastern Section of the ASEV in Baltimore.

ASEV-Eastern Section Meeting. The annual meeting of the Eastern Section of the American Society for Enology and Viticulture will be held July 10-12 in Baltimore, MD. Information is available at www.nysaes.cornell.edu/fst/asev. Please support your professional society! The society has had a direct impact on the Virginia industry as a result of a number of student scholarships.

Red Wine HACCP-like plan. As discussed at the Winemakers Roundtable meeting of May 25, now is the time to evaluate the structure and texture of last year's reds and determine the merits and deficiencies. This will help assure improvement in wine quality for the 2002 vintage. The seven components important to red wine structure/texture include: volume, acidity, roughness, tannin intensity, astringency, dryness and bitterness.

It is important to remember the relationship between structural components. That relationship can be depicted by the following palate balance equation: (the sum of the perception of sweet) must be equal to (the sum of the perception of acidity plus bitterness and astringency)

Prior to the harvest, each of the following factors which influence wine structure/texture should be reviewed. How is each of these influencing your red wine structure/texture and quality?

Each of the above has been discussed in issues of Enology Notes and/or The Vintners Corner, posted on-line. Additionally, on-line are several discussions related to the establishment of a HACCP-like plan.
